For the Love of Veggies
A few weeks ago my baby sister came up with this brain child. She whipped it up for her and her guy and neither of them could stop talking about it. So, I asked for the recipe and made it a day or two later...OMG VEGGIE LOVE!
After I threw this picture up on my Flickr a friend of mine instant messaged me "MUST.HAVE.NOW!"
Roasted Veggie Sandwich
1 Cibatta bread, slice in half length wise
Roast Breaded Eggplant, spread out eggplant on a greased cookie sheet. Drizzle with Olive Oil . Season with garlic powder, black pepper, onion powder and crushed basil. Roast until lightly browned.
Saute sliced purple onion (until soft & translucent), 1 can of unmarinated artichoke hearts, roasted red peppers.
Place bottom half of bread on a lined cookie sheet and begin to build. Place eggplant layer on bottom, layer sauteed veggie goodness on top. Finally, crumble goat cheese over top.
Place top of bread next to bottom on cookie sheet. Bake in a 350 degree oven until cheese softens slightly.
Remove to platter, slice and ENJOY!
